Josy Santos nasceu na Bahia (Brasil). Desenvolveu uma carreira notável na América Latina e na Europa, com inúmeras avaliações positivas de especialistas. Iniciou sua formação vocal em São Paulo com a professora de canto Márcia Soldi. Concluiu o bacharelado em canto pela Universidade Cruzeiro do Sul. Seus estudos posteriores a levaram ao HfMDK Frankfurt am Main, sob a orientação da Profa. Ursula Targler-Sell, onde concluiu seu mestrado com distinção. Em 2019, iniciou seu Exame de Concerto de Ópera no HfMDK Frankfurt am Main.

Recentemente Josy estreou como Idamante em Idomeneo, no Teatro de Lucerna, e também na Semperoper Dresden no papel de Orlowski em Die Fledermaus. Um dos pontos altos de suas performances foi na Ópera Ballet Vlaanderen, onde interpretou Adalgisa em Norma.
Além de sua estreia como Conception em L'heure espagnole, no TOBS.

Os destaques da temporada anterior incluem sua estreia como Dorabella em Così fan tutte no Concertgebouw em Amsterdã, bem como o recital especial "Dois Mundos em Canções" com o pianista Markus Hadulla, com obras de Dvořák, Mahler, Ginastera, Braga e Nepomuceno, apresentado na série de concertos no Mozarteum Brasileiro, no Brasil.

Na temporada 2022/23, a mezzo-soprano estreou na Ópera de Zurique como Testemunha 2/Cantora 2/Mulher 2 em Lições de Amor e Violência de G. Benjamin e em seu país natal, no Teatro Municipal de São Paulo, como Dorabella em Così fan tutte.

Durante a temporada 2021/22, Josy Santos se apresentou na Ópera Real Dinamarquesa como Angelina em La Cenerentola, como mezzo-soprano em Requiem e Viva Verdi! de Verdi. no KKL Lucerne, como Dorabella em Così fan tutte no Teatro de Lucerna, como Marcellina em Le nozze di Figaro na Ópera de Frankfurt, como Romeu em I Capuleti e i Montecchi e como Glutz em Casanova de Burkhard na Suíça no TOBS Biel Solothurn.

De 2017 a 2019, Josy Santos foi solista na Ópera Estatal de Hannover, onde desempenhou papéis como Hänsel em Hänsel und Gretel, Ottavia em L'incoronazione di Poppea, Hermia em Sonho de uma Noite de Verão, La Marchesa Melibea em Il viaggio a Reims, Segunda Dama em A Flauta Mágica, Page em Salomé, Músico em Manon Lescaut, Robin em Le roi Carotte, de Offenbach, e Frau von Hufnagel, em Der junge Lord, de Hans Werner Henze. Ela também apareceu como Silvia em L'isola disabitata de Haydn no Festival de Música de Rheingau, como Dardano em Amadigi di Gaula de Handel na Ópera de Câmara Schloss Rheinsberg, e no papel-título de La Cenerentola de Rossini na Ópera Schloss Hallwyl. Na Opéra National du Rhin, atuou como Samaritana em Francesca da Rimini de Riccardo Zandonai e lá voltou em 2018/2019 como Bernardo Cenci em Beatrix Cenci de Ginastera. A produção foi premiada com o Grande Prêmio 2019 de melhor desempenho do ano pelo Le Syndicat Professionnel de la Critique.

Josy Santos foi premiada em diversos concursos, incluindo o Concours International de Chant Toulouse de 2019, o Operalia de 2018, o Emmerich Smola Förderpreis de 2018, o Concurso Anneliese Rothenberger de 2017 e foi finalista do Concurso Belvedere de 2017. Como membro do Estúdio de Ópera da Ópera Estatal de Stuttgart de 2015 a 2017, teve a oportunidade de cantar papéis importantes como Cherubino em Le nozze di Figaro, Siebel em Fausto, Oberto em Alcina e Second Maid em Elektra.

Também participou de festivais internacionais como o Festival de Música de Rheingau, a Ópera de Câmara Schloss Rheinsberg, o Festival de Trancoso e a Ópera Schloss Hallwyl.
